04 — The roast rhythm
Green coffee gets sourced for the week ahead. We roast Monday and Tuesday, pack Wednesday, and ship Wednesday afternoon. Most subscribers have their bag on the kitchen counter by Friday or Saturday.
It matters because coffee changes fast in week one. The oils are still alive, the bloom is high, the cup tastes the way the roaster meant it to taste. By week four most bags are tired. By week six they're flat. We built the rhythm so you live in week one.

We opened Harvest Moon to serve our community real coffee and real chocolate from people who actually know them. Corbet St. is the café. Union Ave is where we host the gatherings.
